Namakpare/ Sankhe

Made around Holi in Kayastha homes, a simple savoury snack.

Refined Flour/ Maida - 250 grams

Carrom Seeds/ Ajwain - 1 tablespoon

Salt to taste

Ghee - 5 tablespoons

Oil for frying


Step 1 - Knead the flour with ghee, salt & ajwain & then add water and continue to knead. Divide the dough into two parts.

Step 2 - Roll both the parts like a chapati & cut it into squares, rectangles or diamonds with a knife.

Step 3 - Heat oil in a wok & deep fry the squares, initially on high heat & then on a low flame, till brown & crisp.

Step 4 - Spread them all on a plate to cool & store in an airtight container.
